They'll hit everything from live sardines to iron jigs, but be ready for their trademark head-shaking runs toward the kelp. Dorado, or mahi-mahi, are the wildcards that make every offshore trip exciting. These gorgeous fish show up around floating kelp paddies and debris during the warmer months, usually July through September. They're not huge – most run 10 to 25 pounds – but they make up for it with spectacular jumps and stunning colors that change as they fight.
Don't overlook the bottom species either. White seabass are making a strong comeback in San Diego waters, and hooking into a 30 or 40-pound "white" is something you won't forget. These fish are sneaky – they often hit soft and require finesse to land, but they're prized for both their fight and their excellent table fare. Rockfish and lingcod round out the mix, providing steady action when the pelagics are being finicky. Lingcod especially are fun to target – they're ambush predators that hit hard and fight dirty, using every rock and crevice to try and break you off.
